Recipe

Vegetable couscous

Heat two tablespoons of oil in a frying pan.
Add the carrots and celeriac, brown for two minutes then remove.
Add the squash to the pan, sauté for one or two minutes and remove.
Add the leeks, then return the carrots and celeriac to the pan and cook over a low heat for five or six minutes.
Add the squash and raisins, season with pepper and the couscous spice mix and add a small amount of warm stock.
Mix and continue cooking for ten minutes. Bring a large pan of salted water to the boil.
Blanch the Savoy cabbage for two or three minutes, drain and add to the frying pan.
Put the Savoy cabbage in t he pan and add the drained and dried chickpeas, a bit more stock and leave to infuse for two or three minutes.
Pour the quick-cook couscous into a saucepan and add some hot vegetable stock.
Cover and leave to rest for three minutes.

Break up the couscous with a fork. Put the saucepan on the heat and cook for two to three minutes. Fork the couscous through again and tip out onto a large serving dish.

Serves four people.
