An autumn to savor: leek tarte tatin and R.D.O. Ponente Masottina

Lidia Forlivesi’s (@nonsolofood) leek tarte tatin captures it all — both sweet and savory, with the crispness of the brisée pastry and the crunch of toasted hazelnuts.

The recipe
Leek Tarte Tatin
Serves 4

The secret lies in simplicity: wholesome ingredients, slow gestures, and aromas that tell the story of the season.
For the Brisée Pastry
120 g all-purpose flour – 60 g cold butter – 25–30 g ice-cold water – ½ tsp salt – ½ tsp thyme.
Mix the flour, salt, thyme, and butter cut into small pieces. Add the ice-cold water and form a disk. Cover with plastic wrap and refrigerate for 4 hours.
For the Filling
1 leek + 60 g onion – 10 g butter – 2 tsp extra virgin olive oil – 1 tsp sugar – salt – pepper – 30 g Parmesan – 50 g Asiago.
Sauté the leeks and onion with butter, olive oil, and sugar. Let cool slightly, then mix in the cheeses.
For the Caramelized Leeks
5 leeks – 15 g butter – 2 tbsp extra virgin olive oil – 1 tbsp brown sugar – 1 tbsp honey – thyme – salt – pepper.
In an ovenproof pan, melt the butter, oil, sugar, and honey with the thyme. Add the leeks cut into cylinders and sauté until golden, about 10–15 minutes.
Assemble by covering the caramelized leeks with the filling and then the rolled-out brisée (4–5 mm thick). Bake at 180 °C (356 °F) for 40–45 minutes.
Invert while still warm and finish with toasted hazelnuts and a few sprigs of fresh thyme.
