Il viaggio dell'uva continua dentro la cantina di Masottina a Ogliano tra i vigneti del Conegliano Valdobbiadene Prosecco Superiore DOCG

After the harvest, the journey of Masottina’s grapes continues in the place where every detail finds its balance: the Ogliano winery.

This is where all the harvested grapes begin their transformation, through a precise and careful process in which technology and tradition work together to preserve the identity of each vineyard.

Masottina’s winemaking is rooted in a deep belief: quality is built step by step, from the care of the vine to the birth of the wine.

Every bunch that arrives at the winery carries a story shaped by exposure, soil, microclimate and human work. That is why the grapes are guided through a process defined by careful selection, speed and gentle handling, all designed to preserve their freshness and aromatic richness.

The journey continues inside the winery

Once inside the Ogliano winery, the vineyard gives way to technique and expertise. This is where each individual bunch is guided towards its transformation through a process built on precision and respect for the raw material.

Before pressing, the grapes undergo a second manual selection: an essential step to preserve only the most representative bunches and maintain the distinctive character of the territory.

From this moment, the true winemaking process begins: a balance between controlled gestures, technology and oenological sensitivity.

Gravity: a natural ally in winemaking

One of the distinctive features of the Ogliano winery is the role of gravity, used as a true ally throughout the production process.

The winery’s multi-level structure allows the grapes to move naturally, reducing mechanical intervention and preserving the delicacy of the fruit.

From manual selection to pressing, every stage is designed to guide the grapes without forcing them.

The selected grapes are gently crushed without being destemmed and are then transferred to the presses through dedicated openings in the floor, relying simply on the force of gravity.

Every stage is continuously monitored by the technical team through control systems that allow the process to be followed and checked in real time.

The delicacy of pressing and the value of free-run juice

Pressing is one of the most important stages of the winemaking process.

At Ogliano, gentle membrane presses are used to extract the must delicately, while respecting the structure of the grapes.

For the selected grapes, the bunches go directly into the press and are handled with the utmost care: the first pressing yields approximately 55–65% of the juice, while the second pressing brings the yield up to 70%.

A result that is only possible when the grapes have reached perfect ripeness.

Among the most precious components of the process is what is known as free-run juice, the must that is naturally released from the mass of grapes without the need for pressure.

It is a purer and more delicate must, characterised by greater aromatic elegance and lower extraction of harsher components. In white wine production, it provides a fundamental foundation for achieving finesse, balance and clarity of expression.

Separate vinification to express the territory

One of the defining features of the Masottina method is the ability to vinify each vineyard parcel separately.

Thanks to tanks of different capacities, the winery can preserve the individual identities of the vineyards and enhance their distinctive nuances.

This approach makes it possible to understand each component in depth and subsequently create harmonious blends, in which every element contributes to shaping the final style.

It is precisely at this stage that the complexity of the territory truly reveals itself.

Technology in the service of tradition

The ability to keep grapes from different areas separate allows Masottina to shape its style through a balance of technical precision and deep knowledge of the territory.

Our two ContradaGranda Conegliano Valdobbiadene Prosecco Superiore DOCG wines, for example, express the meeting of different identities: Ogliano, bringing structure, complexity and aromatic intensity; Solighetto, with its floral notes; and Rolle, contributing freshness and acidity.

Today, technology allows these characteristics to be preserved with greater precision, but the underlying principle remains rooted in tradition: bringing different elements together to achieve the greatest possible harmony.

It is this pursuit of balance that defines the Masottina style.

An elegant, clean and distinctive character, born from the meeting of terroir, expertise and time.
